The Human Microbiota in Health and Disease: An Ecological and Community-based Approach
A human being consists of a mammalian component and a multiplicity of microbes, collectively referred to as the microbiota or microbiome, with which it has a symbiotic relationship. The microbiota is comprised of a variety of communities, the composition of each being dependent on the body site it inhabits. This community variation arises because the numerous locations on a human being provide very different environments, each of which favors the establishment of a distinct microbial community. Each community consists of bacteria, fungi and viruses with, in some cases, archaea and/or protozoa. It is increasingly being recognized that the indigenous microbiota plays an important role in maintaining the health of its human host. However, changes in the overall composition of a microbial community at a body site, or an increase in the proportion of a particular species in that community, can result in disease or other adverse consequences for the host. The Human Microbiota in Health and Disease: An Ecological and Community-Based Approach describes the nature of the various communities inhabiting humans as well as the important roles they play in human health and disease. It discusses techniques used to determine microbial community composition and features a chapter devoted to the many factors that underlie this mammalian-microbe symbiosis. Uniquely, the book adopts an ecological approach to examining the microbial community's composition at a particular body site and why certain factors can shift a community from a eubiotic to a dysbiotic state. The book is for undergraduates and postgraduates on courses with a module on the indigenous microbiota of humans. It will also be useful to scientists, clinicians, and others seeking information on the human microbiota and its role in health and disease.

Amino Acid Fermentation
This book presents the latest findings on amino acid fermentation and reviews the 50-year history of their development. The book is divided into four parts, the first of which presents a review of amino acid fermentation, past and present. The second part highlights selected examples of amino acid fermentation in more detail, while the third focuses on recent advanced technologies. The last part introduces readers to several topics for future research directions in amino acid production systems. A new field, amino acid fermentation , was created by the progress of academic research and industrial development. In 1908, the Japanese researcher Kikunae Ikeda discovered glutamate as an Umami substance. Then a new seasoning, MSG (monosodium glutamate), was commercialized. Although glutamate was extracted from the hydro-lysate of wheat or soybean in the early days, a new production method was subsequently invented - fermentation - in which glutamate is produced from sugars such as glucose by a certain bacterium called Corynebacterium. The topic of this volume is particularly connected in a significant way with biochemical, biotechnological, and microbial fields. Both professionals in industry and an academic audience will understand the importance of this volume.

Modeling Methods for Medical Systems Biology: Regulatory Dynamics Underlying the Emergence of Disease Processes
This book contributes to better understand how lifestyle modulations can effectively halt the emergence and progression of human diseases. The book will allow the reader to gain a better understanding of the mechanisms by which the environment interferes with the bio-molecular regulatory processes underlying the emergence and progression of complex diseases, such as cancer. Focusing on key and early cellular bio-molecular events giving rise to the emergence of degenerative chronic disease, it builds on previous experience on the development of multi-cellular organisms, to propose a mathematical and computer based framework that allows the reader to analyze the complex interplay between bio-molecular processes and the (micro)-environment from an integrative, mechanistic, quantitative and dynamical perspective. Taking the wealth of empirical evidence that exists it will show how to build and analyze models of core regulatory networks involved in the emergence and progression of chronic degenerative diseases, using a bottom-up approach.

Hydrocarbon and Lipid Microbiology Protocols: Petroleum, Hydrocarbon and Lipid Analysis
This Volume presents methods for analysing and quantifying petroleum, hydrocarbons and lipids, based on their chemical and physical properties as well as their biological effects. It features protocols for extracting hydrocarbons from solid matrices, water and air, and a dedicated chapter focusing on volatile organic compounds. Several approaches for separating and detecting diverse classes of hydrocarbons and lipids are described, including: (tandem) gas chromatography (GC) coupled with mass spectrometry (MS) or flame-ionisation detection, Fourier-transform induction-coupled-resonance MS, and fluorescence-based techniques. The book details high-performance liquid chromatography MS for microbial lipids, as well as a combination of techniques for naphthenic acids. Two chapters focus on quantifying bioavailable hydrocarbon fractions by using cyclodextrin sorbents and bacterial bioreporters, respectively, while a closing chapter explains how compound-specific stable-isotope analysis can be used to measure the fate of hydrocarbons in the environment. Hydrocarbon and Lipid Microbiology Protocols There are tens of thousands of structurally different hydrocarbons, hydrocarbon derivatives and lipids, and a wide array of these molecules are required for cells to function. The global hydrocarbon cycle, which is largely driven by microorganisms, has a major impact on our environment and climate. Microbes are responsible for cleaning up the environmental pollution caused by the exploitation of hydrocarbon reservoirs and will also be pivotal in reducing our reliance on fossil fuels by providing biofuels, plastics and industrial chemicals. Gaining an understanding of the relevant functions of the wide range of microbes that produce, consume and modify hydrocarbons and related compounds will be key to responding to these challenges. This comprehensive collection of current and emerging protocols will facilitate acquisition of this understanding and exploitation of useful activities of such microbes.

Applied Genomics of Foodborne Pathogens
This book provides a timely and thorough snapshot into the emerging and fast evolving area of applied genomics of foodborne pathogens. Driven by the drastic advance of whole genome shot gun sequencing (WGS) technologies, genomics applications are becoming increasingly valuable and even essential in studying, surveying and controlling foodborne microbial pathogens. The vast opportunities brought by this trend are often at odds with the lack of bioinformatics know-how among food safety and public health professionals, since such expertise is not part of a typical food microbiology curriculum and skill set. Further complicating the challenge is the large and ever evolving body of bioinformatics tools that can obfuscate newcomers to this area. Although reviews, tutorials and books are not in short supply in the fields of bioinformatics and genomics, until now there has not been a comprehensive and customized source of information designed for and accessible to microbiologists interested in applying cutting-edge genomics in food safety and public health research. This book fills this void with a well-selected collection of topics, case studies, and bioinformatics tools contributed by experts at the forefront of foodborne pathogen genomics research.

Novel Foods in the European Union
This Brief describes in three concise chapters one of the newest `hot topics' under EU Food Law and Policy: the new Regulation (EU) No 2015/2283 from the European Parliament and by the Council, November 25, 2015, on novel foods, applicable from January 2018. In this work, the Authors discuss the long-time criticized EU Regulation on novel foods ((EC) No 258/1997) and how it has been significantly altered by the adoption of the new regulation. In the first chapter, the Authors provide a comprehensive analysis of the genesis of the new Regulation, its rationale and the policy's goals. In particular, they describe what food business operators shall do in order to get a new product allowed on the EU market, providing updated information on the regulatory developments from the European Food Safety Authority in nanofoods, cloned animals and insect foods. The role of the European Food Safety Authority is also discussed. The second Chapter summarizes the current toxicological studies used to evaluate novel foods safety, which are an extremely important pillar when speaking of food safety and commercial introduction of new products. Finally, the third Chapter discusses the `history of safe use' approach to the problem of novel foods, and factors such as consumption period analysis, preparation advices and processes, intake levels, nutritional composition, and results of animal studies. Food lawyers, professionals and auditors working in the area of official inspections, quality assurance, food traceability, and international regulation, both in academia and industry, will find this Brief an important account.

Plant, Soil and Microbes: Volume 2: Mechanisms and Molecular Interactions
The interactions between the plant, soil, and microbes are very complex in nature and may be antagonistic, mutualistic, or synergistic, depending upon the types of microorganisms and their association with the plant and soil. The multi-trophictactics are involved in these types of interactions to nourish the plants in various habitats and conditions. Understanding the mechanisms of these interactions is highly desired to utilize the knowledge in such an eco-friendly and sustainable way, which may not only resolve the upcoming food security issues but also make the environment green by reducing the chemical inputs. Plant, Soil and Microbes: Mechanisms and Molecular Interactions, along with the recently published Plant, Soil and Microbes: Implications in Crop Science, provide detailed accounts of the exquisite and delicate balance between the three critical components of agronomy. Specifically, these two titles focus on the basis of nutrient exchange between the microorganisms and the host plants, the mechanism of disease protection and the recent molecular details emerged from studying this multitropic interaction. Together they provide a solid foundation for the students, teachers, and researchers interested in soil microbiology, plant pathology, ecology and agronomy.

Snow Mold: The Battle Under Snow Between Fungal Pathogens and Their Plant Hosts
This book provides biological and agricultural insights into snow mold, a fungal disease affecting land plants observed after the melting of snow. Snow mold fungi can cause significant damage to plant growth both in agriculture and in the natural environment, but the interesting ecology and biology described here will capture the attention of scientists in diverse disciplines. The book describes diverse biological phenomena such as cold tolerance of snow mold fungi and plants and their interactions, occurring in an ecologically unique environment under the snow, which maintains constant low temperature and high humidity. Presented here are the unique strategies of snow mold fungi to survive in diverse habitats and the defensive mechanism in plants tolerant to snow mold fungi infection, as well as the conventional control methods using fungicide or cultural practice. Also contained in the book is speculation on the impact of a changing environment on snow mold diseases and their effects on agricultural production.

The Cheeses of Italy: Science and Technology
The book will contain a detailed description on the historical aspects of cheese manufacture, a culmination of historical information on the most traditional and worldwide popular Italian cheese varieties. An overview on cheese production is also included, covering the main general aspects. An overall classification of Italian cheeses will follow, aiming to categorize all the cheese varieties that have a tradition and/or an economic importance. Based on a large literature review, the core of the book will include descriptions cheese making traits which are unique to Italian cheese biotechnology. In particular, the milk chemical composition, the use whey or milk natural starters, some technology options (e.g., curd cooking), the microbiota composition and metabolism during curd ripening, especially for cheese made with raw milk, and the main relevant biochemical events, which occur during the very long-time ripening, will be described. The last part of the book will consider a detailed description of the biotechnology for the manufacture of the most traditional and popular cheeses worldwide.

Freshwater Crustacean Zooplankton of Europe: Cladocera & Copepoda (Calanoida, Cyclopoida) Key to species identification, with notes on ecology, distribution, methods and introduction to data analysis
This work provides a user-friendly, species level taxonomic key based on morphology, current nomenclature, and modern taxonomy using molecular tools which fulfill the most pressing needs of both researchers and environmental managers. This key arms the reader with the tools necessary to improve their species identification abilities. This book resolves another issue as well: the mix of female and male characters used in keys to the calanoid copepods. Often, during the identification process, both calanoid copepod sexes are not available, and the user of such a key is stuck with an uncertain identification. Here, separate male and female keys to the calanoid copepods are provided for both the genera and species levels.

Aquatic Microbial Ecology and Biogeochemistry: A Dual Perspective
This book highlights perspectives, insights, and data in the coupled fields of aquatic microbial ecology and biogeochemistry when viewed through the lens of collaborative duos - dual career couples. Their synergy and collaborative interactions have contributed substantially to our contemporary understanding of pattern, process and dynamics. This is thus a book by dual career couples about dual scientific processes. The papers herein represent wide-ranging topics, from the processes that structure microbial diversity to nitrogen and photosynthesis metabolism, to dynamics of changing ecosystems and processes and dynamics in individual ecosystems. In all, these papers take us from the Arctic to Africa, from the Arabian Sea to Australia, from small lakes in Maine and Yellowstone hot vents to the Sargasso Sea, and in the process provide analyses that make us think about the structure and function of all of these systems in the aquatic realm. This book is useful not only for the depth and breadth of knowledge conveyed in its chapters, but serves to guide dual career couples faced with the great challenges only they face. Great teams do make great science.
