So why do so many of us believe this bad science? This Cheese Is Nuts: Delicious Vegan Cheese at Home
The essential primer and guide to preparing delicious, totally vegan, nut-based cheeses, from the coauthor of The Plantpower Way. In their debut cookbook, The Plantpower Way, Julie Piatt and her ultra-endurance athlete husband, Rich Roll, inspired thousands to embrace a plant-fueled lifestyle, and through their advocacy efforts, podcasts, and talks, countless people are now enjoying healthier and more vibrant lives. In This Cheese is Nuts, Julie is bringing that message to the forefront once more, with a stunning collection of flavorful nut-based cheeses. Julie has always been known for her dairy-free cheeses, and here she shares seventy-five recipes using almonds, cashews, and other nuts to create cheeses anyone can make right at home. Nut-based cheeses are on the cutting edge in the world of vegan cuisine. They're remarkably simple to prepare (all you need are a few simple ingredients and a basic dehydrator), and in as little as twenty minutes, you can have an assortment of tasty fresh cheeses fit for any occasion. Even creating aged cheeses is easy--they require only a day or two in the dehydrator, so making fancier cheeses, like Aged Almond Cheddar, is an almost entirely hands-off process. And though they're delectable on their own, Julie's nut-based cheeses are a terrific component in her recipes for Raw Beet Ravioli with Cashew Truffle Cream, Country Veggie Lasagna with Fennel and Brazil Nut Pesto, French Onion Soup with Cashew Camembert, and more. Filled with the essential tips, tools, and mouth-watering recipes home cooks need to immerse themselves in the world of nut-based cheese-making, This Cheese is Nuts will demonstrate why nut cheeses should be part of any healthy, sustainable diet.

Scotland's Secret History: The Illicit Distilling and Smuggling of Whisky
Illicit distilling in Scotland was seen as a 'right of man' at the end of the 17th century. Attempts to enforce excise duty on the spirit were therefore met with resistance, ranging from riots to more and more ingenious ways of avoiding paying tax. In this book and Charles MacLean and Daniel MacCannell give a fascinating insight into the day-to-day struggles that led to the increase in illicit distilling from the mid-1600s, then to its eventual demise in the early twentieth century. The Cabrach, a wild and sparsely populated part of Aberdeenshire, became renowned for its production of illicit whisky. Local inhabitants mixed farming and distilling with great skill, creating a network of stills and distribution to evade customs. Using new research first-hand historical accounts and official records, the authors show how spirits from this small parish were made and travelled far and wide, across the border to England and across the North Sea to France, firing up revolution and lending solidarity to the struggles of the Jacobites.

Brewed in Michigan: The New Golden Age of Brewing in the Great Beer State is William Rapai's Ode on a Grecian Urn -a discussion of art and art's audience. The art in this case is beer. Craft beer. Michigan craft beer, to be exact. Like the Great Lakes and the automobile, beer has become a part of Michigan's identity. In 2016, Michigan ranked fifth in the number of craft breweries in the nation and tenth in the nation in craft beer production. Craft brewing now contributes more than $1.8 billion annually to the state's economy and is proving to be an economic catalyst, helping to revive declining cities and invigorate neighborhoods. This book is not a beer-tasting guide. Instead, Rapai aims to highlight the unique forces behind and exceptional attributes of the leading craft breweries in Michigan. Through a series of interviews with brewmasters over an eighteenth-month sojourn to microbreweries around the state, the author argues that Michigan craft beer is brewed by individuals with a passion for excellence who refuse to be process drones. It is brewed by people who have created a culture that values quality over quantity and measures tradition and innovation in equal parts. Similarly, the taprooms associated with these craft breweries have become a conduit for conversation-places for people to gather and discuss current events, raise money for charities, and search for ways to improve their communities. They're places where strangers become friends, friends fall in love, and lovers get married. These brewpubs and taprooms are an example in resourcefulness-renovating old churches and abandoned auto dealerships in Michigan's biggest cities, tiny suburbs, working-class neighborhoods, and farm towns. Beer, as it turns out, can be the lifeblood of a community.Brewed in Michigan is a book for beer enthusiasts and for people who want a better understanding of what makes Michigan beer special. Cheers!

The Course of History: Ten Meals That Changed the World
Many decisions which have had enormous historical consequences have been made over the dinner table, and have been accompanied (and perhaps influenced) by copious amounts of food and wine. In this book Struan Stevenson brings to life ten such moments, exploring the personalities, the issues and of course the food which helped shape the course of history. 16 April 1746, the Eve of the Battle of Culloden, which destroyed Bonnie Prince Charlie's hope of a Stuart restoration forever.14 April 1755, Alexandria, Pennsylvania, when a youthful George Washington attended a dinner which sowed the seeds of the American Revolution.20 June 1790, New York, when Thomas Jefferson threw a dinner party at which it was decided Washington DC would become the capital of a new federal republic - the USA. 2 October 1814, The Congress of Vienna, when Napoleon's victors met to divide up the spoils of war and re-draw the boundaries of Europe.27 June 1914, Sarajevo, when Archduke Franz Ferdinand attended a banquet in his honour the day before his assassination plunged Europe into total war. 28August 1928, Achnacarry, when executives from the world's four major oil companies came to a remote Scottish estate to create an oil cartel that would become the model for OPEC.12, February 1938, Hitler's Berghof in the Bavarian Alps, when the Austrian Chancellor signed away his country's independence and Austria was absorbed into Hitler's Third Reich.21 February 1972, Beijing, when a meeting between Richard Nixon and Mao Zedong signaled China's opening up after decades of isolation.26 March 1979, Washington DC, when, against all odds, President Jimmy Carter brokered a peace deal between Egyptian president Anwar Sadat and Israeli PM Menachem Begin.

The Low-FODMAP Recipe Book: Relieve Symptoms of IBS, Crohn's Disease & Other Gut Disorders in 4-6 Weeks
In a landmark study published two years ago, the Australian researchers asked patients with IBS to remove FODMAPs from their diet. They found 74 per cent reported that their symptoms, such as bloating, abdominal pain, gas, excessive burping, diarrhoea and constipation, had improved dramatically. The findings so impressed gastroenterologists at King's College London that they adapted the diet for the UK and many British patients are on the Low FODMAP diet. At first glance, the Low FODMAP diet may appear daunting, as it involves cutting out all five families of fermentable carbohydrates: Fructans (wheat, rye, onions, garlic and various other grains and vegetables), Galacto oligosaccharides (beans and pulses), Polyols (certain fruit, sugar-free gum and mints), Fructose (various fruits, honey and agave nectar) and Lactose (animal milks, yogurts and some cheeses). However, this book gives practical guidance on how to follow the regime while ensuring a balanced, nutrient rich diet, transforming the Low FODMAP diet from a seeming mountain of restrictions to something you can follow easily and with pleasure while your digestive symptoms diminish (or even completely resolve). Whether you need quick and easy meals to prepare or you enjoy the art of cooking a dinner-party-worthy dish, this book will guide you step by step... meaning you can have your cake and eat it (literally!).

Tortillas, Tiswin, and T-Bones: A Food History of the Southwest
In this entertaining history, Gregory McNamee explores the many ethnic and cultural traditions that have contributed to the food of the Southwest. He traces the origins of the cuisine to the arrival of humans in the Americas, the work of the earliest farmers of Mesoamerica, and the most ancient trade networks joining peoples of the coast, plains, and mountains. From the ancient chile pepper and agave to the comparatively recent fare of sushi and Frito pie, this complex culinary journey involves many players over space and time. Born of scarcity, migration, and climate change, these foods are now fully at home in the Southwest of today-and with the southwesternization of the American palate at large, they are found across the globe. McNamee extends that story across thousands of years to the present, even imagining what the southwestern menu will look like in the near future.

Kitchen Conundrums
When Cooking goes awry! A book about food and cooking but not a recipe book. A cookery book to give you an in-depth understanding of the processes involved in cooking. The roast chicken is dry, broccoli has gone brown and the panna cotta is like runny custard, just another unhappy, despondent and dispirited day in the kitchen; so what went wrong and what do I need to do to get it right next time? The intention of this book is to provide the reader with easy to understand information about a broad range of food and cooking issues, including some secrets and tips of the trade along the way. It also sets out to explore the real fundamentals of cookery and explaining in simple terms the science behind cooking. Each chapter features a specific topic area and these include information about the scientific aspects of ingredients and processes. It concentrates on the basic and essential details about the more commonly used ingredients, preparation and cookery methods. This is supported with useful tips, advice and do's and don'ts. The author has intentionally omitted more advanced preparation and cooking techniques for this reason. Also included is a small selection of recipes which illustrate the use of various ingredients and cookery methods discussed throughout and these can be found at the end of the book.

Come and Eat: A Celebration of Love and Grace Around the Everyday Table
Bri McKoy, of the blog Our Savory Life, celebrates the power of the everyday table and shows how, by regularly and intentionally gathering around it, we can follow in the footsteps of Jesus and usher in grace, love, and deep fellowship. Raised in the world of takeout and microwaveable meals, like so many busy women Bri McKoy found herself utterly lost in the kitchen and nowhere near using her dining room table as an inviting place of community. However, as she learned how to more intentionally invite not just others but also herself to her table every day, she noticed that the kitchen stopped feeling like a prison cell and started feeling like a sanctuary, that gathering with others around the table, like Jesus often did during his time on earth, had the power to usher in deep relationship and a fuller understanding of God's love and grace. In Come and Eat, Bri invites readers on an adventure of burnt pie, ten-pound bags of onions, and kitchen catastrophes to discover how to transform a common dining-room table into a vehicle that ushers in the presence of Jesus. It's an invitation with no pressure, no strings attached, no advanced cooking skills or fancy accouterments necessary. Just a healthy appetite and a desire to take a deeper look into the power and ministry that can be found at the table. Combining biblical reflection with engaging personal stories from Bri's own home, as well as the tables she has joined around the world, Come and Eat shows readers how they can intentionally make their own tables a vibrant source of life.

Baking with flavour flours--oat flour, sorghum flour, teff, coconut flour, and nut flours, like almond and hazelnut--adds a new dimension to dessert recipes. Rather than simply adding starch and structure to a dessert (as is the case with wheat flour), these flours elevate the taste of the dessert as well. The recipes incorporate the most popular alternative flours available on the market today and use them in interesting ways, both alone and in combination. Gluten-free bakers will find a whole new range of baking options at their fingertips. Chapters are organized by flour, each one highlighting the best recipes that flour can be used for--be it muffins, tarts, and scones made with sorghum flour; cakes, cookies, and crumbles made with oat flour; or chocolatey desserts made with teff. The chapter opener text highlights useful information for each flour: the taste, its flavor affinities, and how it's best used, stored, and more. With 125 accessible and delicious recipes, including Double Oat Cookies, Buckwheat Gingerbread, Chocolate Chestnut Souffle Cake, Blueberry Corn Flour Cobbler, and Coconut Key Lime Tart, living gluten-free has never been tastier.
