These 100 best-loved recipes served at Chef Pano s award-winning Atlanta restaurant, Kyma, showcase his inspiration: paying homage to the flavours and traditions of Greece, and to the wealth of insight about Greek cooking passed down from his grandmother; his classical French training, and even a touch of his Southern roots. The 100 dishes are Chef Pano s updated takes on Greek flavour combinations and ingredients. Meze include Spicy Red Pepper Feta Spread; Grilled Eggplant and Walnut Spread; Steamed Mussels with Feta Sauce; Braised Octopus with Pasta and Tomato Sauce; and Lamb Phyllo Spirals. Manouri Cheese Panna Cotta, Semolina Custard and Blueberry Phyllo Pies, and Hazelnut Baklava Sundaes are among the desserts. Accompanying the dishes are approximately 60 full-colour photographs by renowned food photographer Francesco Tonelli. Greek wine expert Sofia Perpera provides the wine pairings.

Honey, Olives, Octopus: Adventures at the Greek Table
Combining the best of memoir, travel literature, and food writing, Christopher Bakken delves into one of the most underappreciated cuisines in Europe in this rollicking celebration of the Greek table. He explores the traditions and history behind eight elements of Greek cuisine--olives, bread, fish, cheese, beans, wine, meat, and honey--and journeys through the country searching for the best examples of each. He picks olives on Thasos, bakes bread on Crete, eats thyme honey from Kythira with one of Greece's greatest poets, and learns why Naxos is the best place for cheese in the Cyclades. Working with local cooks and artisans, he offers an intimate look at traditional village life, while honoring the conversations, friendships, and leisurely ceremonies of dining around which Hellenic culture has revolved for thousands of years. A hymn to slow food and to seasonal and sustainable cuisine, Honey, Olives, Octopus is a lyrical celebration of Greece, where such concepts have always been a simple part of living and eating well.

Three years ago, Spiri Tsintziras found herself mentally, physically and spiritually depleted. She was stretched thin - raising kids, running a household and managing a business. She ate too much in order to keep going and then slumped in front of the telly at night, exhausted, asking herself 'What is it all for?' Spiri's quest for a healthier, more nourishing life took her from her suburban home in Melbourne to her family's homeland of Greece, and to the small Greek island of Ikaria. The people of Ikaria - part of the famous 'Blue Zones' - live happy, healthy and long lives. Inspired by their example, Spiri made some simple lifestyle changes and as a result lost weight, gained energy and deepened the connection to those closest to her. Spiri's heartwarming memoir, which includes delicious family recipes, will console and entertain anyone bogged down in the daily grind - encouraging you to put your health and happiness first.

The Gift of the Greek: 75 Authentic Recipes for the Mediterranean Diet
A rustic but modern cookbook, filled with traditional recipes passed down through several generations of Greek and Mediterranean cooks. With a minimalist feel and an emphasis on the use of fresh ingredients, limited use of processed raw ingredients, and a generous dose of olive oil in almost every dish, this is a cookbook that moves focus away from weight management enthusiasts, toward the more health-conscious foodie. In The Gift of the Greek, you will find recipes for colorful, vibrant salads, delicious specialty breads, an array of dips for every occasion, and an abundance of desserts influenced by Greece's geographical position as a checkpoint between the East and the West. Fragrant syrups, eastern spices, and heartwarming custards adorn the pages of this contemporary, yet traditional cookbook. For generations the Greek diet was almost exclusively vegan, which is something that resulted from the country's close relationship with religion and, subsequently, lent. This book is designed with the traditional Greek diet in mind, using a minimal amount of meat. Eat your way to a healthy olive-oiled heart, and live as long as George, Yiota's 99-year-old granddad!

It's All Greek to Me: Transform Your Health the Mediterranean Way with My Family's Century-Old Recipes
Debbie Matenopoulos, the first member of her family born in America, grew up in a traditional Greek household, eating delicious, authentic Greek cooking that her family had passed down for generations. By the time Debbie had started her television career in New York on The View, she began eating a standard American diet. But despite carefully limiting how much she ate, she found herself gaining weight and lacking energy. As Debbie's career as an entertainment news reporter and television host on BS, MTV, E!, and other networks had her constantly on the go, she was grabbing whatever food was readily available. It was only when she returned to her traditional Greek diet that she found herself easily--and healthily--realizing her natural weight and regaining her natural energy, stamina, and physique. Now, in It's All Greek to Me, Debbie shares 120 of her family's traditional Greek recipes and adds her own touch to make them even healthier and easier to prepare--plus, this new edition features 15 brand new recipes! After tasting Debbie's dishes, such as her mouthwatering version of Spanakopita (Spinach Feta Pie), Kalamaria Kaftera (Spicy Calamari), her family's secret recipe for Baklava, and, of course, Arni kai Patates (Classic Roasted Leg of Lamb with Potatoes)--you'll be amazed these delicious foods are good for you. With a foreword by Dr. Michael Ozner, one of the nation's leading cardiologists, the recipes in It's All Greek to Me adhere to the healthiest diet on the planet: the traditional Mediterranean Diet. Modern science is catching up to what Greeks have known for millennia: health comes from eating natural, whole-food ingredients that haven't been processed or pumped full of hormones, antibiotics, or preservatives. Let It's All Greek to Me bring your friends and family together to share in the experience of a Greek meal and way of life. Opa! A portion of all proceeds will benefit the ALS Association.

Gifts of the Gods: A History of Food in Greece
What do we think about when we think of Greek food? For many, it is the meze and traditional plates of a typical Greek island taverna from summer holidays or from Greek restaurants at home. This book takes us into and beyond the taverna to offer us a unique, comprehensive history of the foods of Greece. Andrew and Rachel Dalby discuss how the land was first settled, what was grown, and how certain fruits, herbs and vegetables came to be identified. Moving through prehistorical and classical Greece, and the Roman, Byzantine and Ottoman empires, they explore the variety of Greek foods among communities outside the national borders as well as the food culture of the regions and islands of Greece itself. Through a synthesis of modern Greek food, with all that it owes to Christianity and to Greeks of the diaspora, they lead us into a discussion of Greek hospitality. Greek food is brimming with thousands of centuries of history, lore and culture. With many superb illustrations, and traditional recipes that blend historical and modern flavours, Gifts of the Gods is a fine account of this rich and ancient cuisine.

Eat, Drink, and be Merry (Luke 12:19) - Food and Wine in Byzantium: Papers of the 37th Annual Spring Symposium of Byzantine Studies, in Honour of Professor A.A.M. Bryer
This volume brings together a group of scholars to consider the rituals of eating together in the Byzantine world, the material culture of Byzantine food and wine consumption, and the transport and exchange of agricultural products. The contributors present food in nearly every conceivable guise, ranging from its rhetorical uses - food as a metaphor for redemption; food as politics; eating as a vice, abstinence as a virtue - to more practical applications such as the preparation of food, processing it, preserving it, and selling it abroad. We learn how the Byzantines viewed their diet, and how others - including, surprisingly, the Chinese - viewed it. Some consider the protocols of eating in a monastery, of dining in the palace, or of roughing it on a picnic or military campaign; others examine what serving dishes and utensils were in use in the dining room and how this changed over time. Throughout, the terminology of eating - and especially some of the more problematic terms - is explored. The chapters expand on papers presented at the 37th Annual Spring Symposium of Byzantine Studies, held at the University of Birmingham under the auspices of the Society for the Promotion of Byzantine Studies, in honour of Professor A.A.M. Bryer, a fitting tribute for the man who first told the world about Byzantine agricultural implements.

Cooking with Loula
In Cooking with Loula, Alexandra Stratou invites readers into the kitchen of her modern Greek family, revealing their annual traditions and bringing their recipes to life-with touching remembrances of Loula, the woman who cooked for three generations of Stratou's family and who taught her that cooking is as much about love and identity as it is about nourishment. Many classic dishes are represented here, such as pastitsio and dolmades, but Stratou's culinary trainingabroad shows up in such non-Hellenic creations as a green salad with avocado, apple, and Dijon mustard and a spinach gnocchi in which feta cheese appears alongside Gorgonzola. The nearly 100 recipes are all hearty and gun fussy, and organized the way real home cooks think, with chapters for simple, healthful weekday dishes; more languorous Sunday meals; and traditional holiday fare. With hundreds of mouthwatering photographs and whimsical illustrations, this book is truly a gem.
